Ingredients

Boiled pumpkin

425 g, mashed

Icing sugar

1 tbs

Mixed spice

½ tsp

99% fat-free vanilla yoghurt, sweetened

1½ cup(s), (370g)

Ginger biscuits

8 individual, thin, coarsely chopped

Crystallised ginger

2 tbs, finely chopped

Instructions

  1. Combine pumpkin, sugar and mixed spice in a medium bowl.
  2. Divide pumpkin mixture and yoghurt among 4 bowls. Sprinkle with biscuit and ginger to serve.
